Just out of curiosity, of all the charactor class specific sets, are any of them worth trying to collect? if so which? and outside of charactor class type sets, are any really worth it?

Trang`s, IK`s and Mavina`s sets, you might get a nice pay for those, i really can`t tell how much, but i`ve heard they are quite expensive.

imo, the list of the character sets according to popularity;
tal rasha's, trang-oul/ik, griswold, ma'vina, natalya's, aldur's..
as those set items outside the above, the disciple set is a great underestimated set. the orphan's call set has great individual items =)

The Angelic is a real nice set to get you through most of normal. Easy to find. Fits all classes @ lvl 12 and offers a tremendous amount for a little more than base stats, (need a few in dex),Resist, MF, AR, + skill, wearing 2 rings gives +40 life w/ +12 life regen and Mana regen. It will carry you to lvl 30, no problem, and there you can wear nicer gear.
Angelic, a must have for any new character.

Right now im at a clvl 41 paladin maxed holy freeze, have 8 on zeal and plan on maxing that out, also planned max is cold resistance, and salvation. currently have 5 on holy shield. and 6 on cold resistance as of now. nothing yet on salvation.
Equipment i currenly have
celglaw tooth and pincers, sigons guard, shelter and gage, hsarus heel, and a monks amulet
in all i have +2 to skills with the amulet and sigons guard,
my damage output right now with the celglaw pincer and tooth, using zeal with holy freeze is 420-600, holy freeze damage is at 81-83. outside of that any sugestions other then whats been said.

Well, at level 41, you may want to think about moving from a set to getting good pally gear. Get a scepter with good life steal and some + skills. You can buy that from the vendors.
Griswolds is the only Pally specific set, easy to find too, but I have never used it. I prefer the runewords.

Right now im only playing on classic version, i dont have expantion as of yet, and ive asked before with no answer in another thread, how or where or what do i need to find and aquire runewords?
I am gona keep sigons guard for the +1skills for now, along with that monk amulet, and i just had found a sceptor to + to all paladin skills as well, so i am probably gona drop that tooth and pincers now for that, take a loss in overall damage for now, but my rings right now have good life/mana leach, (only used 1 mana potion the whole time ive played this charactor) only thing im using really that takes mana is zeal, and the leach takes more then it uses. of course the occasional hit from mana burners... as far as life, as of now im not having too much trouble leaching that either, with 10% life/hit
